Classic Cheesecake


serves: a crowd
: 2.5+ hours
equipment: mixer, springform pan, oven

suggestion: I would make this the day before you want to serve it


  • crust:
    • 3 cups vanilla wafers, crushed
    • 1/2 cup white sugar
    • 1/2 cup unsalted butter, melted
  • filling:
    • 5 blocks cream cheese
    • 1 & 3/4 cups white sugar
    • 3 tablespoons all-purpose flour
    • 1/4 vanilla extract
    • 4 eggs
    • 1/2 cup whipping cream


  • preheat oven to 350F
  • crust:
    • mix together crushed vanilla wafers and sugar. stir in melted butter
    • press into bottom and sides of the springform pan
    • bake crust for 10 minutes in 350* oven for 10 minutes
  • after the crust is out, turn the oven up to 450F
  • filling:
    • blend cream cheese, flour, and vanilla with an electric mixer
    • add eggs, one-by-one
    • remember to scrape the bowl sides occasionally
    • pour in whipping cream
    • pour into a cooled crust
  • bake at 450 for 10 minutes
  • reduce temperature to 250F
  • bake at 250F for 2 hours
    • it will be wiggly when you take it out of the oven, it will harden as it cools
  • cool completely and then refrigerate, before serving

*best served with a fruit topping
