Cinnamon Sugar Donut Muffins

These muffins were a result of one of the best nights in a long time. A night so fun that it turned into morning, where these muffins were born. I have to give a huge shout out to one of my closest friends, Carter, who whipped a batch of these babies up at 5:30 in the morning with ingredients just hanging out in my pantry and fridge. These muffins are so easy and delicious, I just had to share them with you!

serves: 12
equipment: muffin pan and oven

ingredients:

  • for the muffins:
    • 1 1/2 cups all-purpose flour
    • 1/2 cup sugar
    • 1 1/2 teaspoons baking powder
    • 1/8 teaspoon salt
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon nutmeg
    • 1 teaspoon vanilla extract
    • 1 large egg
    • 1/2 cup milk
    • 1/3 cup butter, melted and cooled
  • for the topping:
    • 1/3 cup sugar
    • 2 teaspoons ground cinnamon
    • 5 tablespoons butter, melted
    • instruction:
  • preheat oven to 350 degrees
  • Grease muffin pan – set aside
  • in a bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg – set aside
  • in another small, beat the egg; then add the milk, vanilla extract, and melted butter and mix well
  • pour the wet ingredients into the bowl with dry ingredients and stir just until moistened, careful not to over mix
  • spoon batter into muffin cups about 1/2 – 3/4 of the way full
  • bake in preheated oven for 20-25 minutes
  • after cooking, allow muffins to cool for 5 minutes before removing from pan
  • For the topping:
    • in a small bowl, mix together cinnamon and sugar
    • in a second small bowl, melt 5 tablespoons of butter
    • dip tops of the cooled muffins into melted butter and then roll in the cinnamon sugar mixture
