Parmesan Garlic Roasted Cabbage

This cabbage came out of my in-law’s garden in Florida. It was huge, heavy, and very delicious. Because this cabbage was so large, we only used half of it for this recipe.


serves: 4-6
time: 30 minutes

ingredients:

before cooking
  • 1/2 of a large cabbage, or 1 small cabbage
  • 1/4 c. olive oil
  • 1 tbsp. minced garlic
  • 2 tsp. thyme
  • 2 tsp. oregano
  • 1/2 tsp. garlic powder
  • 1/3 c. parmesan cheese, grated
  • salt and pepper, to taste

instructions:

  • preheat oven to 425°F
  • spray a sheet pan with cooking spray
  • cut cabbage into 1- to 1.5-inch wedges, gently so it doesn’t fall apart
    • lay wedges on the greased sheet pan
  • mix the minced garlic into the olive oil
  • in a separate bowl, mix thyme, oregano, garlic powder, and parmesan cheese together
  • brush the olive oil and minced garlic mixture all over the cabbage wedges, making sure to cover all exposed areas
  • sprinkle the thyme, oregano, garlic powder, and parmesan cheese mixture onto the cabbage wedges
  • roast for 25 minutes, until the edges are crispy
  • once out of the oven, sprinkle the desired amount of salt and pepper onto the wedges
  • serve immediately
after cooking
